The technology of dark tea has two notable characteristic in the processing of Hunan dark tea: Pile-Fermenting and Fire-Drying with pine wood during primary processing. Without these two processes, t can't be called “Dark Tea”. Black glossy, dark brown, stale and mellow, a little pine odor is the characteristic of dark tea.
The earliest record about “dark tea “appeared in Chinese history in 1524, in which the real dark tea originated in Anhua of Hunan. Hunan Dark Tea has four characteristic: First: history, Second: large quantity, Third: good quality, Forth : all kinds.
Dark tea is an indispensable beverage in the daily life if the northwestern minorities. But it wasn't produced and the vegetables and fruits were short in the northwest before, the food that the people ate were beef, mutton and cream cheeses, which were difficult to digest, and easy to make them suffer from disease. Dark tea can not only supplement human body with essential vitamins, but also resolve fat and grease. So that “One Couldn't Live Without Tea Only A Day”. The important of tea in the life of the northwestern minorities was recorded in many documents of Chinese history.
Hunan was the main producing area of dark tea during the Ming Dynasty, the production of tea in Anhua, Linxiang was the largest, and the quality was excellent. Regardless of long journey, tea-merchants of Shanxi arrived at Anhua and Linxiang, and bought mountains to plant tea, guided the processing technique, carried the products to the Northwest and the North continuously, and also sold to Russia , England , Japan etc, where Chinese tea was popular in the people. During the middle and later period of Qing Dynasty, the production and sale of Hunan Dark tea were very prosperous, and enjoyed a good reputation all over the world.

The tea-merchants who undertook the transport mission on the Ancient Tea-house Road were mainly from Shanxi and Shanxi , because Shanxi was near to the north of china, and Shanxi was the center of politics, military affairs and culture of the country. These merchants carried Foria Cocos brick tea from Hunan to north, and exchanged house, furriery, medicinal herbs, etc. which were needed in the central plains, reaped high profits from them.
Ming Dynasty government thought that Hunan dark tea with large yield, strong and stimulating taste was more suitable for the minorities to drink with cream cheese in it, so they made the tea produced in Anhua county of Hunan as “official Tea “.It was carried to the areas of Xianyang and Jingyang of Shanxi province and made into “Jingyang Brick Tea”, because produce in summer, so that named “Fu brick tea”.
